When I was given a box of these gorgeous cherry pl When I was given a box of these gorgeous cherry plums from my lovely friend Nat over at @cloudriverfarm_bnb I wanted to do something simple but spectacular with them
.
I decided to roast them and serve them over a vanilla spiked yoghurt
.
The best part of this recipe is how flexible it is
.
You can use whichever sweetener you like, depending on your way of eating
.
Keto? Use a brown sugar replacement and sugar-free maple syrup.
Vegan? Coconut yoghurt and maple syrup.
Paleo? Same again
.
You can cut your cherry plums in half and remove the pips, and you should absolutely do this if you are serving them to small children
.
Or, if you’re lazy like me, you can roast them whole and just push the pips to one side of your bowl
.
The sweetness level of the finished dish will be dependent on the ripeness of your plums and I suggest that you taste and tweak to suit
.
Enjoy!
 
INGREDIENTS:
Roasted Cherries:
1 kg of cherry plums
¼ cup sweetener of choice
½ cup of water
 
Vanilla Spiked Yoghurt:
900 grams of Greek yoghurt
2 teaspoons of vanilla paste
6 teaspoons of honey or liquid sweetener of choice
 
METHOD:
Pre-heat your oven to 200⁰ C, conventional
Halve your plums and remove the pips, or if you’re lazy like me just roast them whole.
(This is not recommended if you are serving them to small children)
Lay your plums out on an oven tray and sprinkle them with your sweetener.
Carefully pour the water around the plums.
Bake for 15-20 minutes until they are soft and caramelised.
To make the yoghurt, stir the vanilla and honey through and then taste.
Adjust the level of sweetness to your preferred level.
Drizzle the luscious ruby sauce over your plums and let it flow gently onto your yoghurt.
Garnish with a sprig of fresh lemon thyme.

You don't need an on-site chef or an entire day of baking to find beautiful food to photograph
.
I have a sneaking feeling that there will be more fresh ingredient shots finding their way onto my feed in the future

I've always wanted to try capturing the veins and patterns of Tuscan kale, or the ombre beauty of a fresh artichoke
.

I was feeling a distinct level of blah around posting on my socials and had decided to give myself a week or so off while I travelled to visit my family

And then we got stuck in the middle of Victoria's lockdown, which sucked big hairy ones
.
I did get to visit my beautiful Gran, just as they announced it, so I'm eternally grateful for that
.
But the big, noisy, loving, crazy family get together that I'd been so looking forward to was cancelled
.
I needed a few days to have a sulk and get my a** home to isolate
.
BUT, I'm back now and ready to celebrate my 10k followers with a series of give-aways that kick off tomorrow
