Introduction

You will want to eat these mushrooms with everything.

We had them with some glorious eye fillet and the pairing was a-ma-zing.
I can see them sitting equally pretty alongside chicken or pork.

They have an rich and complex flavour thanks to the sneaky addition of the coconut aminos (sub soy sauce if you prefer)

The recipe

Ingredients

500 grams button mushrooms
40 grams ghee
3 teaspoons minced garlic
1 tablespoon chives, chopped
1 tablespoon thyme
2 tablespoons parsley, chopped
1 tablespoon coconut aminos

Directions

Step 1
Melt the ghee, along with the garlic in a frying pan over med-high heat
Step 2
Add the mushrooms and cook for about 10 minutes, tossing regularly
Step 3
Add half of the parsley, along with the thyme and the chives, and the coconut aminos and stir through well
Step 4
Cook for a further 5 minutes until the mushrooms are dark and crisp on the edges.
Step 5
Serve with the remaining parsley sprinkled over the top
