Introduction

In response to a recent survey I did, you all told me that you wanted recipes for edible gifts this Christmas season.

With the cost of living going through the roof, I thought it might be helpful to create some simple, affordable recipes for spreading the love this year.

These Gingerbread Truffles pack quite the flavour punch but are made using a handful of store-brand ingredients for a total cost per batch of approx $4.50.

That’s less than 10 cents per truffle!

Pop them in a clean, pretty jar and use a marker to write a message on the front and you have the perfect gift that is thoughtful and delicious without stretching the budget.

The recipe

Ingredients

2 x 250 grams Gingernut biscuits (you can use Butternut Snaps if you don’t want the ginger kick)
400 gram tin of sweetened condensed milk
¼ tsp ground ginger
½ tsp cinnamon
¼ tsp nutmeg
1 tsp vanilla extract
1 sachet of chai latte drink mix powder (approx 20 grams)

Directions

Step 1
Place the Gingernut biscuits into the bowl of your food processor and blitz to a fine crumb.
Step 2
Pour into a large mixing bowl and add the other ingredients.
Step 3
Mix very well until the mixture comes together in a thick dough.
Step 4
Roll heaped teaspoons full of the mixture into balls and place on a lined tray.
Step 5
Roll in caster sugar with a sprinkle of spices through it.
Step 6
Chill until ready to package and gift.
