Introduction

Simple, fast, warm, gooey chocolate.

This mug cake is perfect for those times when you just need a little something sweet.

It’s made of basic pantry ingredients and can be in your mouth five minutes after you first think of it.

I know that there are a bazillion chocolate mug cake recipes out there but that doesn’t mean that mine isn’t epic. Because we all know it is.

I ran a survey on my social media as to which flavour you would all like and Choc-Orange just slid in above Choc-Hazelnut.
I have about six more flavour combinations for this cake so I see a series in the future.

The recipe

Ingredients

1 tablespoon of liquid coconut oil
1 tablespoon of heavy cream
1 egg
2 tablespoons of powdered monkfruit
2 tablespoons of cocoa powder
Pinch of salt
2 squares of dark chocolate
2 teaspoons of orange zest

Directions

Step 1
I know, I know, mug cakes are supposed to be mixed up in the mug for a no mess, no fuss experience…but I’m so bad at that. I like to use a small mixing bowl and then spoon the batter into the mug.
Step 2
Feel free to do it however you want – awkward and messy, or my way.
Step 3
Place the cream and the egg in your bowl or mug. Whisk until fully combined.
Step 4
Add the coconut oil and whisk until batter is smooth.
Step 5
Add in your monkfruit. Whisk until evenly mixed into batter.
Step 6
Lastly, whisk the cocoa powder, orange zest and salt in and beat until smooth.
Step 7
If you’re using a mixing bowl, carefully spoon the batter into your mug and push the chocolate squares into the centre of the mug until only just covered by the top of the batter.
Step 8
Cook cake in the microwave on high for about 1 minute.
Step 9
Serve with whipped cream, ice cream, shaved chocolate…or all three.
