Broccoli and Halloumi Fritters

Introduction

These Broccoli and Halloumi Fritters are perfect in every way.

Healthy, easy, delicious and packed full of protein.

This recipe was born out of desperation after a weekend away with my bestie, where we bought some incredible fritters at the market, ate them that night, went back for more and ate them the next night…and packed some for her to take home.

I knew that I would have to create my own version, so I did.

These fritters are substantial without being heavy and full of healthy, fresh flavours with pops of salty halloumi to make you smile.

The recipe

Ingredients

1 can chickpeas, rinsed and drained
350 grams broccoli
100 grams halloumi
1 small onion, finely diced
2 cloves garlic, finely diced
¼ cup finely chopped herbs of choice
⅓ cup rolled oats
¼ cup flour
1 egg
1 tsp salt
½ tsp ground black pepper
Olive oil, for cooking

Directions

Step 1
Chop the broccoli florets into small pieces and grate the stems.
Step 2
Grate or finely chop the halloumi.
Step 3
Heat 1 tablespoon of the olive oil in a large frying pan and add the onion.
Step 4
Cook for a few minutes until the onion starts to soften, then add the garlic.
Step 5
Sautee for 1 minute then remove from heat.
Step 6
Place the drained chickpeas and broccoli into the bowl of a food processor and pulse until combined.
Step 7
You don’t want a smooth paste, you still want texture.
Step 8
Place this mixture into a mixing bowl and then add all other ingredients, except for olive oil.
Step 9
Mix with your hands until well combined, then divide into 6 even portions.
Step 10
Shape into fritters and lay on a lined tray.
Step 11
Chill in the fridge for 30 min.
Step 12
Drizzle olive oil into a frying pan and heat over med-high.
Step 13
Cook the fritters for 4 min on either side.
