Apple Rose Tarts

Introduction

I originally created these as a lazy girl’s romantic dessert.

They seriously take only minutes to put together, have no fancy ingredients, require minimal skill, and look INCREDIBLE!

The secret to those perfect rose petals? Firstly, make sure that your apple is cut into thin, but even, slices.

You want them to be about 2mm thick – any thinner and they burn, any thicker and they break.

You can do this veeeeery carefully and laboriously with a sharp knife, but I personally worship at the alter of my mandolin.

So, thaw your pastry and get ready to fill it with a luscious cream cheese, sugar and spice centre, framed by pretty apple petals, then cradled in that golden pastry crust.

The recipe

Ingredients

4 red-skinned apples
1 Tbsp lemon juice
3 sheets of puff pastry, defrosted
1/2 cup cream cheese (light cream cheese works too)
1/4 cup caster sugar
1 Tbsp ground cinnamon

Directions

Step 1
Pre heat oven to 180 degrees C
Step 2
Lightly spray a 12-hole muffin pan
Step 3
Halve and core the apples and then slice thinly, as per directions in caption
Step 4
Pour the lemon juice into a bowl of cold water and submerge the apple slices
Step 5
Microwave for 3-4 min until just tender then drain and let cool
Step 6
Slice the puff pastry into 4 equal strips
Step 7
Spread the cream cheese along the middle of each strip
Step 8
Combine the cinnamon and sugar together and then use about 2/3 of the mixture to sprinkle over the cream cheese
Step 9
Overlap the apple slices along the length of the pastry, with the cut side towards the centre, making sure that the slices finish higher than the pastry
Step 10
Fold the bottom edge of the pastry up and over the sections of apple, to hold them in place
Step 11
Pinch the short ends closed and then carefully roll each strip up into a rose before placing them in the muffin pan
Step 12
You can very gently fan the petals out at this stage
Step 13
Sprinkle the tops with the remaining spiced sugar and then bake for 40-45 min
Step 14
Enjoy warm or cold, with ice cream or cream, with a loved one or hiding in the pantry - your choice!
