Blueberry Oats

Introduction

If you’ve been following me for a while, and especially if you have a copy of my Edible Heirlooms cookbook, you’ll know about my love affair with porridge

There is something about a warm, comforting bowl of porridge that feels like I’m giving myself a big hug

I love the texture of steel cut oats over rolled oats and I really believe that it makes a better bowl of porridge

I like to make a batch of this when I meal prep on Sunday’s and portion it out so that I have four quick, easy and freaking delicious breakfasts ready to go

I have suggested that you top it with a dollop of yoghurt, but I like to add a big spoonful of cottage cheese and then stir it through before adding the blueberries

Don’t pull that face until you’ve tried it!

The roasted Blueberries are optional but highly recommended

Ingredients

1 cup of steel cut oats
3 cups of water
1 cup of your milk of choice
1/2 teaspoon of salt
1/4 teaspoon of ground nutmeg
1/2 teaspoon of cinnamon
2 teaspoons of vanilla
2 tablespoons of sweetener of choice
250 grams fresh blueberries
1 tablespoon sweetener of choice
1 teaspoon of vanilla

Directions

Step 1
Pre-heat your oven to 200°C.
Step 2
Place all of the blueberry ingredients into a small bowl and toss until well combined.
Step 3
Tip the mixture out onto a lined tray and roast for 5-10 minutes.
Step 4
Place all of the oats ingredients into a pot over medium-high heat and bring to the boil, stirring.
Step 5
Reduce the heat and simmer for approx. 15 minutes, defending on how you like your final texture.
Step 6
I like to retain a bit of “bite” in mine.
Step 7
Remember that the more you stir it, the creamier it will be.
Step 8
You can add some milk or water at the end if you don’t like it as thick as I do.
Step 9
Serve the oats with a healthy dollop of yoghurt, topped with roasted blueberries
