Cauliflower and Chickpea Curry

Introduction

This Cauliflower and Chickpea Curry is sweet and mild, but packed full of flavour, making it perfect for small children or sensitive tummies.

A couple of cans of chickpeas and some basic pantry items and you have a healthy, satisfying and delicious dinner where tender chunks of cauliflower soak up the flavour and pair beautifully with the creaminess of chickpeas.

If you’ve been looking at ways to cut back on your meat intake while also saving at the supermarket, then give this one a go.

The recipe

Ingredients

Curry Paste:
2 tsp minced garlic
1 Tbsp tomato paste
1 shallot
1 Tbsp fresh ginger
1 cup coriander, leaves and stems
2 tsp ground coriander
1 tsp cumin
1 tsp cardamom
1 tsp garam marsala
½ tsp salt
1 tsp turmeric
¼ - ½ tsp cayenne pepper
2 tsp olive oil
1 head cauliflower
1 Tbsp olive oil
1 onion, finely diced
50 grams tomato paste
400 ml can coconut milk or evaporated milk
2 x 420 g cans chickpeas, drained and rinsed
60 grams baby spinach

Directions

Step 1
Place all of the curry paste ingredients into a small food processor and blitz until a thick textured paste forms.
Step 2
Cut the head of cauliflower into florets and bring a large pot of water to the boil.
Step 3
Add the florets and boil for 5 min until just soft, then drain.
Step 4
Heat the oil in a large pot or frying pan and spoon the curry paste in.
Step 5
Cook for a minute or so, until fragrant and then add the onion and tomato paste.
Step 6
Add your milk of choice and bring to the boil.
Step 7
Reduce the heat to a simmer and cook for 10 minutes.
Step 8
Add the chickpeas and cauliflower and simmer for a further 10 minutes.
Step 9
Remove from the heat and stir the baby spinach through.
Step 10
Serve, topped with yoghurt (coconut yoghurt for vegan) and fresh coriander.
