Pssst! Ever wanted to sneak some healthy probiotics into your family?

These latkes are packed with the good stuff in the form of crispy on the outside, tender on the inside, delicious fritters.

I’ve never been able to get past my initial mindset when trying to add fermented foods into my diet.

I mean, after spending decades working hard to stop food going funky in my pantry, it’s difficult to relax into it.

I buy a really good quality sauerkraut and use it in these very moreish latkes to give them a little tang.

They’re health food in disguise…stealth food?

The recipe

Ingredients

1 cup of good quality sauerkraut
3 large potatoes, approx 750 grams
2 cloves of garlic, finely minced
1 small leek, halved and finely sliced
3 tablespoons of aquafaba (liquid from canned chickpeas)
2 tablespoons of plain flour
4 tablespoons of finely chopped dill
½ teaspoon of salt
¼ teaspoon of pepper
1 cup of oil for frying

Directions

Step 1
Place the sauerkraut into a strainer and press as much moisture as possible out.
Step 2
Peel the potatoes and then grate them into a clean tea towel.
Step 3
Squeeze the potatoes in the tea towel until there is no more juice running out. (It’s important to remove as much moisture as possible to get really crispy latkes)
Step 4
Place the potato and sauerkraut into a large bowl with the remaining ingredients and mix to combine.
Step 5
Let the batter sit for 15 minutes.
Step 6
Heat one cup of oil in a large frying pan and use a ¼ cup measure to scoop batter into the oil.
Step 7
Flatten each latke slightly and cook for 5 minutes on each side.
Step 8
Remove from the oil and drain on a paper towel.
Step 9
Continue until all of the batter is used up (you should get about 16 latkes in total)
Step 10
Serve warm or cold with, sprinkled with sea salt and dressed with a dollop of coconut yoghurt and lemon wedges to squeeze over.
