Introduction

These Turkey Burgers will be your new favourite thing.

Bursting with fresh and healthy flavours, juicy and delicious, these burgers need two hands and a napkin.

Higher in protein and lower in fat than chicken, turkey is often overlooked as a protein.

I love to use turkey breast steaks and pulse them in my food processor to make the minced meat – this way, I know exactly what is in my burger.

And once you’ve made my Green Goodness Dressing, I can promise you it will be a staple in your house too.

By combining the juicy and flavourful turkey  with a lush and herby dressing, you get a burger that is fresh, healthy and bursting with deliciousness that the whole family will want to gobble-gobble up!

Ingredients

1 zucchini, approx 300 grams
800 gram turkey breast steaks
1 egg
2 tsp minced garlic
1 tsp onion powder
1 tsp salt
½ tsp ground black pepper
Zest of half a lemon
1 Tbsp chopped parsley
1 shallot, finely diced
GREEN GOODNESS DRESSING:
½ cup Greek yoghurt
¼ cup mayonnaise
½ avocado
4 Tbsp fresh coriander, chopped finely
Zest of half a lemon
2 tsp lemon juice
½ teaspoon of salt
¼ tsp ground pepper
1 Tbsp fresh parsley, chopped finely

Directions

Step 1
Grate the zucchini and then squeeze as much moisture as you can out of it using a clean tea towel.
Step 2
Place the turkey breast steaks into your food processor and pulse until they are minced.
Step 3
Put the turkey, the zucchini and all of the other ingredients into a large bowl and mix well with your hands until they are thoroughly combined.
Step 4
Divide into 8 portions and shape into patties.
Step 5
Cook them in whichever way you prefer (see note)
Step 6
Place all of the dressing ingredients into a small blender and blitz until creamy and bright green.
Step 7
Serve with lots of fresh greens on a bun drizzled with Green Goodness Dressing.
Step 8
Note: You can cook these by baking them in the oven, in a pan or on the BBQ, or in an airfryer. Just make sure that the internal temperature reaches 75° C
