Introduction

I love this cheap and cheerful family dinner.

It’s perfect for those busy days when you know you have to feed a family at the end, or for those warm days when you don’t want to run your oven.

And now that a trip to the supermarket costs about $7,000, it’s a budget-friendly, tasty and filling dinner that can safely stay on high rotation.

Imagine. You can take all the childhood favourite flavours of a classic cheeseburger, but make it under $4.50 per serve.

Even better, you don’t need to leave the house to get it and it cooks itself!

Slow, fast food anyone?

The recipe

Ingredients

1kg beef mince
1 onion, diced
2 cloves garlic, crushed
1 tsp salt
½ tsp ground black pepper
4 Tbsp Worcestershire sauce
3 cups beef stock
1 can diced tomatoes
500g macaroni elbows
1 green capsicum, diced
½ cup chopped gherkin pickles
250g block cheese, grated

Directions

Step 1
Brown the mince in a frying pan and tip into the slow cooker.
Step 2
Add the onion, garlic and seasonings.
Step 3
Pour the beef stock and tomatoes into the slow cooker and stir to combine.
Step 4
Cook on low for 6 hours
Step 5
Add the pasta, gherkins and capsicum and stir through. (the sauce may look too runny but the pasta will absorb the liquid)
Step 6
Cook on high for 15 min.
Step 7
Stir the grated cheese through until melted.
Step 8
Serve with a pickle on top.
