Introduction

There are no words to describe how amazing your house will smell as this cake bakes.

It’s like every Granny’s house in the world have combined and then added a donut shop!

Soft and fluffy, gently spiced cake is paired with juicy apple to create an afternoon treat that is perfect warm or cold.

You could even warm a slice up and serve it with ice cream…OMG! *runs to the freezer*

The recipe

Ingredients

3 small apples, approx 300 grams
1 cup of almond meal
1/4 cup of golden flaxmeal
1/4 cup of flaked almonds
3 teaspoons of baking powder
1/2 cup of desiccated coconut
1/2 cup of golden monkfruit or brown sugar substitute
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
2 eggs
1/2 cup of milk of choice
1/4 cup of light olive oil or melted butter or coconut oil
Erythritol and cinnamon to garnish

Directions

Step 1
Peel and core apples and cut each one into eight sections
Step 2
Place the apple wedges into water until you’re ready to use them
Step 3
Pre-heat oven to 160 degrees C, fan forced
Step 4
Place all of the dry ingredients into a large mixing bowl and sift to remove any lumps
Step 5
Whisk the eggs together and add your milk and oil, beating to combine
Step 6
Grease and line a loaf tin and pour the cake batter in (this is quite a wet batter so don’t freak out)
Step 7
Arrange apple wedges on top
Step 8
Bake for 45-55 minutes depending on how deep your tin is
Step 9
Cake is cooked when a skewer comes out moist but not wet
Step 10
Cake is cooked when a skewer comes out moist but not wet Sprinkle warm cake with erythritol and cinnamon combined
