Vanilla Cream and Roast Cherry Recipe

I’m so lucky to live in a valley, surrounded by cherry orchards

Cherry season here is one of my favourite times of year, so to celebrate this bounty, I created this fast but freaking delicious dessert on toast recipe for Eat Well Magazine

This luscious treat will make you wish you ate on toast every day

The recipe

Ingredients

Good quality fruit loaf, cut into 4 thick slices
300 g fresh cherries
2 tbsp caster sugar
2 tsp vanilla paste
2 tsp balsamic vinegar
125 g smooth ricotta
125 g mascarpone
1 tbsp caster sugar
1 tsp vanilla paste

Directions

Step 1
Preheat your oven to 200°C and line a tray with baking paper.
Step 2
Pit the cherries and leave them whole
Step 3
Place the cherries in a bowl with the other ingredients and toss until well coated.
Step 4
Tip the cherries onto the tray and cook for 15 min.
Step 5
Stir gently and cook for a further 15 min.
Step 6
Remove and let cool to room temperature.
Step 7
Toast the fruit loaf.
Step 8
Place the vanilla cream ingredients together and whisk until thickened.
Step 9
Dollop the vanilla cream onto each slice of fruit toast and then pile the cherries on top.
Step 10
Drizzle with the sweet juices from the tray.
