Introduction

Let’s be honest guys, Santa has got a lot riding on his shoulders this year.

More than ever, he is responsible for bringing joy into a world that has been pretty dark.

So how can we help? Well, we can fuel his travels with these healthy and delicious Coffee Shortbread cookies.

Gluten and sugar free, they won’t upset his tummy or give him a badly-timed sugar crash.

And they’re infused with coffee, you know, to keep him feeling feisty the whole Eve long.

So, come on, be an elf and do your bit to help Santa out this year.

The recipe

Ingredients

250 grams of softened butter
1/3 cup of golden monkfruit, powdered
2 teaspoons of powdered instant coffee
1 teaspoon of vanilla extract
3/4 cup of buckwheat flour
1/2 cup of brown rice flour
1 tablespoon of tapioca starch

Directions

Step 1
To create powdered monkfruit, place your granulated golden monkfruit into a coffee or spice grinder and blitz until powdered.
Step 2
Place the butter, monkfruit, coffee and vanilla in the bowl of your stand mixer and cream for eight minutes, scraping down the sides occasionally.
Step 3
Reduce the speed to low and add the flours and tapioca starch in slowly.
Step 4
Beat until combined.
Step 5
Take two sheets of baking paper, the size of a large baking tray and sandwich the dough in-between them, then use a rolling pin to roll the dough to aout 5mm thick.
Step 6
Place the baking paper and dough on a tray and chill in the fridge for 30 minutes.
Step 7
Pre-heat your oven to 170° C, fan-forced
Step 8
Remove your dough from the fridge and cut into desired shapes.
Step 9
You can re-roll and cut this dough as much as you like but will need to chill it again.
Step 10
Bake the biscuits for 8-10 minutes, you don’t want them to get too browned or they will scorch.
Step 11
Remove from the oven and sprinkle with granulated golden monkfruit while still hot.
Step 12
Place on a tray under the Christmas tree with some milk for Santa.
