Introduction

Every time that someone buys my cookbook, I wonder how long it will be before I get a message about my 30 second hollandaise.

It would be hands-down the most talked about recipe in Edible Heirlooms.

I think it’s because we all think of hollandaise as a tricky sauce that needs to be whisked over a water bath and therefore is saved for very special occasions.

Every day can be a special occasion now.

Eggs Benedict with bacon meets a bagel and they become friends for life.

Using my easy 30-second hollandaise, this recipe is the perfect brunch sandwich.

Ingredients

30-second hollandaise:
120g butter
3 egg yolks
1 tbsp lemon juice
Salt & pepper, to taste
8 rashers bacon
4 eggs
2 cups baby rocket or spinach leaves
4 bagels

Directions

Step 1
Take a large mouthed mason jar, or any jar that your hand blender will comfortably fit inside.
Step 2
Place the jar on your scale and zero it back.
Step 3
Weigh the butter in the jar and then melt it in the microwave until just melted.
Step 4
Place the egg yolks and lemon juice into the butter.
Step 5
Place the hand blender at the bottom of the jar and blitz until combined, lifting the blender slowly.
Step 6
Taste and season with salt and pepper, if desired.
Step 7
Cook the bacon to your desired level of crispness and then remove from the pan and keep warm while you cook the eggs.
Step 8
Fry the eggs in the hot bacon grease until the yolk is just set.
Step 9
While the eggs cook, split and toast your bagels.
Step 10
Place the rocket or spinach on the bagel and top with bacon and the fried egg.
Step 11
Drizzle with hollandaise.
