Introduction

Today, I’m bringing you one of my all-time fave recipes.

I make a big batch of these meatballs at least once a month.

Not only are they super delicious, they’re also really healthy and easy to make.

Perfect for lunch preps, a quick protein-packed snack or to toss over pasta with a quick sauce.

You can play around with the protein that you choose, and variations of the seasonings, to suit your own tastes.

The recipe

Ingredients

1 kg turkey breast mince
4 tsp minced garlic
1 Tbsp fresh basil, finely chopped
1 Tbsp smoked paprika
1/2 tsp salt
¼ tsp pepper
½ cup of parsley, chopped finely
Zest of 1 lemon
100 grams semi-dried tomatoes, chopped finely
120 grams baby spinach, chopped finely
2 eggs
200 grams feta, crumbled

Directions

Step 1
Heat your oven to 180°C and line two large baking trays.
Step 2
Place all of the ingredients into a large mixing bowl and mix well until completely combined.
Step 3
Roll the mixture into 40 golf ball sized meatballs.
Step 4
Bake for 25-30 min.
