Introduction

Well, hello there.
Look at you, you delicious cheesy squares of yummy!

My best friend is visiting this week and she is allergic to not just nuts, but also coconut.
Since 99% of my baking uses one or the other, this makes life a bit tricky.

Yes, I can just buy store bought stuff that’s full of grains and sugars and crap…or I can put my thinking cap on and create a whole new recipe that is healthy for both of us.

We will be snacking on lots of cheese boards and/or charcuterie platters so I wanted a lovely crispy cracker that we can both enjoy.

I swapped my usual almond meal with lupin flour and made a few other tweaks and this cracker is so good that I may not go back.

Lupin flour is a great low carb flour that is produced here in Australia. It is not just very low in carbs, it’s also very high in protein and fibre.

The recipe

Ingredients

250 grams of lupin flour
175 grams of finely grated parmesan cheese
30 grams of nutritional yeast flakes
½ teaspoon of dried herbs of choice
45 grams of ghee
4 eggs

Directions

Step 1
Pre-heat oven to 175⁰ C, fan forced
Step 2
Place all of the dry ingredients into a large mixing bowl.
Step 3
Melt the ghee and add eggs, whisking to combine.
Step 4
Pour the wet ingredients into the dry and mix thoroughly.
Step 5
Line two large or four small baking trays with baking paper.
Step 6
Divide dough into two or four, depending on your trays.
Step 7
Roll dough out in-between two sheets of baking paper until about 3mm thick.
Step 8
Place sheet with dough onto tray and using a sharp knife cut into squares
Step 9
Repeat until all dough is on trays, and then bake for 15 minutes.
Step 10
Remove from oven and carefully score the lines again to create individual crackers.
Step 11
Return to the oven and leave until cool.
Step 12
Perfect with dip, on a cheese board, or with my caramelised balsamic onion with goat’s cheese as a canape.
