Introduction

Are you ready? Because this chicken will rock your world.

Crispy on the outside with a delicious golden hue, these luscious infused wings will leave you wanting more.

Tender and moist (yes, I said it) chicken, infused with delicate flavours then flash fried until it’s crispy on the outside.

This chicken would be epic for a picnic or to cook up a bit batch to pop in the freezer for a busy night.

The recipe

Ingredients

1 kg chicken wings
1 litre coconut milk
2 tablespoons turmeric powder
1 tablespoon ginger, finely chopped
1 stalk lemongrass, bruised
1 litre light olive oil

Directions

Step 1
Place the coconut milk and spices into a large pot and bring to the boil.
Step 2

Poach for 12 minutes.
Step 4
Remove the chicken wings for the poaching liquid and drain n a paper towel.
Step 5
Gently pat dry with a second paper towel and leave to air dry.
Step 6
(the drier the wings are, the crispier they will be)
Step 7
Heat the olive oil in a large pot and flash fry the wings in batches until they are crispy on the outside.
