Introduction

I created this recipe for Eat Well Magazine as part of their 3-ingredient desserts feature.

Three ingredients? Pfffffft! How about two?

Who doesn’t love a silky, indulgent mousse? Even better when it is made from two ingredients, one of which is the popular caramelised white chocolate.

This is such a quick and simple dessert, yet the end result is lusciously spectacular.

Perfect for a dinner party or for a hot festive lunch.

The recipe

Ingredients

180g Caramilk chocolate
1.5 cups cream

Directions

Step 1
Chop the Caramilk chocolate into small pieces and place in a heatproof bowl over a pot of simmering water until melted, stirring occasionally.
Step 2
Let the chocolate cool slightly while you whip the cream.
Step 3
Whip your cream to stiff peaks and remove half a cup to sit aside.
Step 4
Slowly add the remaining cream to the chocolate, one spoonful at a time until you’ve added about half.
Step 5
Fold the remaining cream into the chocolate mixture.
Step 6
Spoon into pretty glasses and then chill for at least 2 hours.
Step 7
Pipe the reserved whipped cream on top for garnish before serving.
