Chocolate Pot De Crème

Introduction

These decadent little pots of luscious chocolate are an amazing finish to any meal.

The recipe

Ingredients

250 grams of dark chocolate (min 85%)
6 tablespoons of sugar
6 egg yolks
1 1/3 cups of heavy cream
2/3 cup of milk
¼ teaspoon of salt
1 teaspoon of vanilla extract

Directions

Step 1
Pre-heat your oven to 160⁰ C, fan forced
Step 2
Chop the dark chocolate into small pieces and place in a heatproof bowl.
Step 3
Place the cream, milk, salt and vanilla into a pot and bring to a simmer on the stove.
Step 4
Pour the cream mixture over the chocolate and whisk until it is smooth and glossy.
Step 5
Place the egg yolks and sugar into the bowl of your stand mixer and whisk on high until they are thick and creamy.
Step 6
Slowly add the chocolate mixture, beating on med-low continuously.
Step 7
Strain the mixture into a large jug.
Step 8
Line a large, deep baking dish with a tea towel.
Step 9
Pour the chocolate custard in to four x 250 gram ramekins.
Step 10
Pour hot water into the baking dish until it reaches the middle of your ramekins.
Step 11
Cover the entire tray tightly with foil and poke a few holes in it to avoid steam building up inside.
Step 12
Bake for 30 minutes.
Step 13
Chill for at least three hours.
Step 14
Serve with chocolate curls, a dusting of cocoa or cream on the side.
