I was lucky enough to get my hands on some of the new vanilla flavoured monkfruit sweetener by Locako through the amazing Keto Lane.
My food brain went into hyperdrive and all of a sudden I couldn’t live without this vanilla flavoured treat.

Layers of soft, vanilla pastry are filled with fresh berries and vanilla cream. It serves six, but I won’t hold you to that.

The recipe

Ingredients

1/4 cup of coconut flour
2 tablespoons of powdered Locako Vanilla Monk Fruit Sweetener
1 tablespoon of baking powder
125 grams of shredded mozzarella
30 grams of cream cheese
1 egg
1 tablespoon of coconut oil, melted
1 cup of cream
1 tablespoon of Locako Vanilla Monk Fruit Sweetener
1 cup of fresh raspberries
Extra raspberries for garnish
1 tablespoon of Locako Vanilla Sweetener

Directions

Step 1
Make a heart template out of thick paper.
Step 2
Pre-heat oven to 170⁰ C, fan forced
Step 3
Make the dough by placing the mozzarella and cream cheese into a large microwave safe bowl.
Step 4
Heat on high for 1 minute, remove and stir.
Step 5
Continue this in 30 second bursts until the mixture is smooth and melted.
Step 6
Sift the coconut flour and baking powder together into the cheese and add the egg, coconut oil and vanilla.
Step 7
Mix well to combine and knead the dough for a minute or so to make it really smooth.
Step 8
Roll out into a large rectangle.
Step 9
Lay the template over the dough and cut out your heart shapes.
Step 10
Lay them on large lined trays and cook for approx. 12 minutes.
Step 11
Remove from the oven and let cool.
Step 12
Whip the cream with the vanilla sweetener and layer your cake with hearts and raspberries.
Step 13
Finish off by blitzing a spoonful of the vanilla sweetener in a spice grinder or bullet blender to make powder.
Step 14
Fill the centre of the cake with extra berries and dust with the powdered sweetener.
Step 15
Gaze into the eyes of your beloved as you spoon-feed it to them…or eat it off your lap in front of Netflix.
