Introduction

Tangy and flavourful, these juicy and tender pieces of chicken are the perfect addition to any occasion.
Want a perfect dinner? Throw them together with a big fresh salad.
Looking for easy lunch prep ideas? Toss a batch of these together on Sunday and you’re sorted.
World peace summit? I can’t make any promises, but I bet it would go better with a big platter of these, paired with my Creamy Herb Dressing

The recipe

Ingredients

500 grams of chicken tenders
4 tablespoons of olive oil
4 tablespoons of lemon juice
2 tablespoons of red wine vinegar
3 tablespoons of fresh oregano, finely chopped (or 2 teaspoons of dried)
3 teaspoons of minced garlic
2 teaspoons of salt
0.5 teaspoon of finely ground pepper
2 teaspoons of fresh thyme, finely chopped

Directions

Step 1
Combine all of the marinade ingredients in a mixing bowl or large ziplock bag.
Step 2
Add the chicken tenders and toss to fully coat.
Step 3
Seal or cover and place in the fridge for at least 4 hours, turning every now and then if possible.
Step 4
When ready to cook, heat your bbq or grill pan to high and spray lightly with oil.
Step 5
Sear the chicken tenders until browned and cooked through.
Step 6
Serve with a healthy dollop of my Creamy Herbed Dressing.
