Introduction

Have you ever wondered what would happen if a fruit cake and ANZAC biscuits had a love child?

It’s okay, I know you have.

Introducing the Spiced Oat Cookies.

Soft and chewy in the centre with crispy edges, full of fruit and spiked with a slug of my Chai Syrup, these cookies taste like a fancy fruit cake.

Made with wholesome ingredients and minimal sugar, they’re perfect for lunchboxes and afternoon tea alike.

Ingredients

250 grams pitted dried dates
100 grams prunes
125 grams butter
80 grams brown sugar
1-2 Tbsp Chai Syrup (or 1 tsp each of cinnamon and nutmeg)
1 tsp bi-carb soda
140 grams wholemeal plain flour
90 grams rolled oats
1 egg

Directions

Step 1
Chop the dates and prunes into small pieces and place in a saucepan with the butter and brown sugar.
Step 2
Heat over medium heat until the butter melts.
Step 3
Cook for 5-10 min until the dates are soft and starting to fall apart.
Step 4
Add the Chai Syrup and then the bi-carb soda, stirring to combine.
Step 5
Sit aside to cool down.
Step 6
Mix the flour and oats in a large mixing bowl and then add the cooled mixture and the egg.
Step 7
Combine well.
Step 8
Line two large trays with baking paper and preheat your oven to 160°.
Step 9
Use wet hands to roll dessert spoons of mixture into 18 balls and sit them on the trays.
Step 10
Flatten the balls and then bake for 18 min.
Step 11
Let the cookies cool on the trays before removing.
