So, these were originally going to be Hot Cross Buns but I don’t feel like the cross on top adds anything, flavour-wise, to the buns so I left it off.
And then I bit into one and all I could think was “Hot damn, that’s good!”
These buns are based on the famous recipe from the Godmother of keto Maria Emmerich.
Her keto buns are one of the most famous and popular recipes in the webiverse and I make them all of the time.
So when I was looking longingly at the buns in the supermarket and thinking how much I love their spiced deliciousness with a slather of butter, it occurred to me that I might be able to tweak her recipe and make it sweet.
Now, adding or removing anything from a recipe changes it (duh) and these are not exception. The crust stays slightly softer and the bun is a touch moister (is that even a word?) in the centre.
BUT they are light and fluffy with that amazing sweet, spiced, fruity flavour that we think of at Easter, and all of that while being free from sugar, grains or dairy.
Now, back up keto police.
I am aware that they have dried fruit in them which is “not keto” but the carb count is still super low and I think it’s worth the indulgence.
If you don’t, then leave them out. Or don’t cook the buns. It’s a strange and free world.
