Introduction

It’s my son’s 25th birthday today and (I know this will shock you) I’m all about the food
.
I asked if he had any special requests and he threw a challenge at me to make a grown-up, fancy version of a banana split
.
Little Grasshopper, you need to give me something more difficult than that
.
I workshopped the idea with the ladies in my Edible Images Workshop group and this is what we came up with
.
Luxurious caramelised bananas, salted chocolate dipped wafers, vanilla bean ice cream, honey-roasted macadamia nuts and a boozy rum sauce
.

The recipe

Ingredients

4 Bananas
4 ice cream wafers
1/4 cup melted chocolate
120 gram tub honey-roasted macadamia nuts
Vanilla bean ice cream
Sea salt
60 grams butter
1/2 cup dark brown sugar
1 tablespoon water
1 tablespoon water
2-4 tablespoons dark rum

Directions

Step 1
To make the rum sauce, place the dark brown sugar, butter and water in a saucepan and heat over medium heat until the butter melts and the sugar dissolves.
Step 2
Increase the heat to high a boil for 1 minute, stirring the whole time.
Step 3
Add the cream and the rum and boil for a further 4 minutes, stirring continuously.
Step 4
The sauce will thicken as it cools and can be served warm or cold.
Step 5
Cut your wafers in half diagonally and dip one edge into the melted chocolate.
Step 6
Chill in the fridge on a tray covered with baking paper.
Step 7
Split your bananas in half and sprinkle with sugar.
Step 8
Using either a blowtorch or a hot grill, caramelise the sugar.
Step 9
Brush some melted chocolate across your plate and then arrange your banana.
Step 10
Add the ice cream, the wafers and a scatter of honey-roasted macadamias.
Step 11
Finish off with a hefty drizzle of rum sauce and a sprinkle of sea salt flakes.
Step 12
Enjoy with a smug look on your face.
