Gingerbread Granola

Introduction

It’s been such an awful year that I think we’re all looking forward to having something to celebrate at the end of it.

If you are like me though and are totally not quite ready to put your tree up and start playing Christmas carols, this is the recipe for you.

This magical granola is gluten free, nut free, refined sugar free and vegan, and will fill your house with the scent of Christmas spirit while it bakes.

Sitting down to a bowl of this granola feels like you should be snuggled up in front of a stocking-hung chimney, waiting for Santa.

It would also make a fabulous homemade gift, in a jar with a pretty ribbon.

The recipe

Ingredients

1 cups of gluten-free rolled oats
1/4 cup of ground flax meal
1/4 cup of pepitas
1/4 cup of buckwheat groats
1/4 cup of hemp seeds
1/4 cup of dried cranberries
1/2 teaspoon of ginger powder
1 teaspoon of cinnamon
1/4 teaspoon of cardamom
1/4 teaspoon of nutmeg
2 teaspoons of vanilla extract
2 tablespoons of molasses
2 tablespoons of maple syrup
1/4 cup of olive oil

Directions

Step 1
Pre-heat your oven to 160° C, fan forced
Step 2
Combine all of the dry ingredients in a mixing bowl.
Step 3
Add the wet ingredients and mix really well for a minute or so.
Step 4

Line a large baking tray with silicone paper and spread the granola out in an even layer.
Step 6
Bake for 25 minutes, stirring every 5 minutes or so.
Step 7
Don’t panic if the granola seems soft at the end of the cooking time, it will crisp up as it cools.
Step 8
Store in an airtight jar for up to three months.
Step 9
Sprinkle ¼ cup over some coconut yoghurt or drench in your favourite milk.
Step 10
Start humming Christmas carols while you eat it.
