Introduction

Tired of the same, boring beans on toast?

Grab some fresh, crusty bread and try these delicious marinated beans instead for a delicious, herby take full of flavour.

Perfect for a protein packed breakfast or as an alternative to boring salads at dinner.

The recipe

Ingredients

2 cans butter beans, drained and rinsed
2 tsp minced garlic
1 shallot, finely sliced
2 Tbsp mint, finely chopped
3 Tbsp parsley, finely chopped
Juice and zest of 1 lemon
½ tsp dried oregano
½ tsp salt
70ml extra virgin olive oil
30ml red wine vinegar
½ tsp chilli flakes (optional)

Directions

Step 1
Place all of the ingredients into a mixing bowl and stir well to thoroughly combine.
Step 2
Spoon into a jar and let the flavours mingle.
Step 3
Store in the fridge for up to 10 days, returning to room temp before serving.
