Vegan Tomato and Basil Penne

Introduction

I’ve started looking down the barrel of *gasp* getting old and thinking about stuff like heart health and cholesterol lately.

I’m trying to add more plant-based protein into my diet and I’m really enjoying coming up with dishes that tick all of the boxes for delicious, healthy and satisfying (and if I can sneak it past the radar of the carnivores, then it’s a double win!)

This fresh and creamy pasta dish is sure to please even the pickiest of eaters.

Simple, yet so richly satisfying, it is the perfect comfort food.

 

The recipe

Ingredients

¼ cup olive oil
4 tsp minced garlic
1 small red onion, diced
½ tsp salt
¼ tsp ground black pepper
¼ - ½ tsp chilli flakes (to taste)
1 tbsp agave or maple syrup
800g cherry tomatoes
½ cup vegetable stock
½ cup oat milk
450g silken tofu
500g wholemeal penne pasta
1 cup fresh basil, roughly chopped

Directions

Step 1
Heat the olive oil in a large frying pan over medium-high heat and gently cook the garlic and red onion until they start to soften.
Step 2
Add the salt & pepper, chilli flakes and agave and cook for a further minute.
Step 3
Add the cherry tomatoes and reduce the heat to medium.
Step 4
Cook until the tomatoes are softened and collapsing - approx 15 min.
Step 5
Use a potato masher to gently press down on them to create a chunky sauce.
Step 6
Add the vegetable stock and stir through.
Step 7
Place the oat milk and silken tofu in a blender and blitz until smooth and creamy, then pour into the pan.
Step 8
Leave to stay warm while you cook your penne al dente, according to the package instructions.
Step 9
Drain and reserve ¼ cup of the pasta water.
Step 10
Add the pasta to the tomato sauce and toss through until well coated, adding pasta water if required.
Step 11
Stir chopped basil through and serve.

Soy products a no-no. Presume tofu may be excluded from this recipe, just won’t be creamy, which is fine with me?
