Perfect Summer Salad

This fresh and delicious salad is on high rotation in my house all year around, but it lends itself particularly well to summer dining.
It’s so refreshing and filling, without being at all heavy.

  • 4 cups of baby spinach leaves

  • 1 avocado, quartered and chopped

  • 125 grams of sun-dried tomatoes

  • ¾ cup of feta cheese, crumbled

  • ¼ cup olive oil

  • 2 tablespoons of lemon juice

  • 2 tablespoons of red wine vinegar

  • 1 teaspoon of minced garlic

  • ½ teaspoon of dried oregano

  • Salt and pepper to taste

  • 2 teaspoons of honey or sweetener of choice


  • Place all of the dressing ingredients into a small blender jug and blitz or shake well I a capped jar to combine.
  • Layer the spinach, with the avocado, tomatoes and feta and then drizzle the dressing over the top to taste.
  • Perfect to serve with my Marinated Chicken Tenders.
  • Leftover dressing can be kept in a jar in the fridge or up to 1 week.
