Baked Brie with Balsamic Blackberries

Introduction

Gooey, melty, luscious cheese.

I don’t really need to say any more, do I?

Except that it’s paired with an amazing sweet and savoury flavour bomb of warm blackberries drenched in balsamic.

This Brie Pot is a one of a kind creation from the gorgeous Sarah at Sea Soul Studio and I was lucky enough to shoot it recently (which involved copious amounts of melted cheese)

Head over to her page and keep your eye out for the release of these pots, they’re the perfect centrepiece for any gathering and you may as well be prepared when we can have gatherings again…right?

In the meantime, you can use any dish that your Brie fits in.

The recipe

Ingredients

200 gram round of Brie cheese
½ cup of roasted pecans
1 punnet of blackberries, (keep a couple aside for garnish)
1 tablespoon balsamic vinegar
1 tablespoon sugar free maple syrup or honey
1 teaspoon vanilla extract

Directions

Step 1
1 teaspoon vanilla extract
Step 2
Slice the top off the Brie, very carefully.
Step 3
Place the Brie in your beautiful Brie Pot, on a tray and place in the oven.
Step 4
Cook for 10-15 minutes or until the cheese is soft and starting to droop but isn’t melting.
Step 5
In a medium saucepan, heat the blackberries, balsamic vinegar, honey, and vanilla over medium heat, stirring regularly.
Step 6
Cook, stirring periodically, until the liquid is reduced and syrupy.
Step 7
Serve your Brie with a generous dollop of Balsamic Blackberries, and a scattering of roasted pecans.
Step 8
Brie is best eaten straight away, while hot and melty.
