Introduction

In the latest instalment of edible Christmas gifts, I bring you these miraculous morsels.

Perfect for gifting to schools or other events where allergies or food preferences may be an issue, they’re also bound to get you on the nice list with anyone you might know who has dietary restrictions.

Gluten free, vegan, grain free, can be made nut-free too, these delightful cookies combine salty sweet with a hint of bitterness from the tahini.

One bowl, mix with a spoon and ready in under an hour.

They’re both gloriously chewy in the centre and crisp on the edges.

The only thing they can’t do is your Christmas shopping for you – sorry about that.

Seriously, as the big man himself would say – do yourself a favour and make a batch of these.

For a budget friendly packaging idea, use oven bags to place your cookies and tie with a ribbon, or decorate empty Pringles tins with wrapping paper and place the cookies inside.

The recipe

Ingredients

140 grams tahini
125 grams maple syrup
130 grams almond meal
(substitute 150 grams of sunflower meal for nut-free)
1 tsp vanilla paste
¼ tsp bi-carb soda
¼ tsp salt
¼ cup sesame seeds
2 Tbsp black sesame seeds
Sea salt flakes

Directions

Step 1
Combine all of the ingredients in a mixing bowl and mix with a spatula until a thick paste forms.
Step 2
Line a tray with baking paper and roll spoonfuls of mixture into 15 balls.
Step 3
Place the sesame seeds in a bowl and roll each ball in them before spacing out evenly on the tray.
Step 4
Using a flat surface like the lid of a jar, press the cookies until they are approx 5mm thick.
Step 5
Chill in the fridge for 30 min.
Step 6
Heat your oven to 180° C and bake for 10-12 min until just starting to brown.
Step 7
Remove from the oven and sprinkle the tops with sea salt while still warm.
Step 8
Leave on the trays to cool.
