What do you get if you take my Marinated Chicken Tenders and combine them with my Perfect Summer Salad?

You get Summer Chicken Salad.

This salad is so good as a simple lunch or dinner, or to take on a picnic.
We took some visiting friends to one of our National Parks last week and this was number one on my list to pack for lunch
It disappeared pretty quickly, so I’ve got to assume that I’m not alone in my love for it.

The chicken is great to prep ahead and the salad can be put together well beforehand also, I just add the avocado and dressing at the last minute.

Ingredients

  • Marinated Chicken:
  • 500 grams of chicken tenders

  • 4 tablespoons of olive oil

  • 4 tablespoons of lemon juice

  • 2 tablespoons of red wine vinegar

  • 3 tablespoons of fresh oregano, finely chopped (or 2 teaspoons of dried)

  • 3 teaspoons of minced garlic

  • 2 teaspoons of salt

  • 0.5 teaspoon of finely ground pepper

  • 2 teaspoons of fresh thyme, finely chopped

  • Summer Salad:
  • 4 cups of baby spinach leaves

  • 1 avocado, quartered and chopped

  • 125 grams of sun-dried tomatoes

  • ¾ cup of feta cheese, crumbled (I LOVE the Yarra Valley one)

  • Dressing:
  • ¼ cup olive oil

  • 2 tablespoons of lemon juice

  • 2 tablespoons of red wine vinegar

  • 1 teaspoon of minced garlic

  • ½ teaspoon of dried oregano

  • Salt and pepper to taste

  • 2 teaspoons of honey or sweetener of choice

Directions

  • Combine all of the marinade ingredients in a mixing bowl or large ziplock bag.
  • Add the chicken tenders and toss to fully coat.
  • Seal or cover and place in the fridge for at least 4 hours, turning every now and then if possible.
  • When ready to cook, heat your bbq or grill pan to high and spray lightly with oil.
  • Sear the chicken tenders until browned and cooked through.
  • Place all of the dressing ingredients into a small blender jug and blitz or shake well in a capped jar to combine.
  • Layer the chicken with the spinach, avocado, tomatoes and feta and then drizzle the dressing over the top to taste.
