Traditional Pho is a wonderfully lengthy process, involving the slow creation of a flavourful broth.

But ain’t nobody got time for that.

This quick pho uses store bought broth and a clever spice trick to shortcut the process, thus making this a quick and easy weeknight dinner.

I took some liberties with my flavours and am delighted with the fresh and zingy result.

Ingredients

  • 500 grams of chicken breasts

  • 4 cups of chicken broth (the better the quality, the better the end result)

  • 1 teaspoons of whole coriander seeds

  • 2 whole star anise

  • A thumb length piece of ginger, cut into small pieces

  • 1 stalk of lemongrass, cut into finger lengths and bruised

  • 1 packet of shirataki noodles

  • 1 cup of bean shoots

  • ½ cup of coriander

  • 1 lime

  • 1 teaspoon of fish sauce (optional)
