Tired of the same old boring sandwich for lunch?
Try this instead – Herb Crusted Sardines
Created for Eat Well Magazine, these delicious marinated sardines are topped with a crispy, crunchy crumb to make them extra tasty
Use this pantry staple to add a tasty dose of Omega-3 and a hefty punch of flavour to your lunch


  • 3 tbsp olive oil

  • 1 tsp garlic powder

  • 2 tsp dijon mustard

  • 1 tbsp lemon juice

  • 1 tbsp italian herb mix

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 500 g tinned sardines

  • 100 g panko crumbs

  • 2 cloves garlic, minced

  • 2 tsp olive oil

  • 1 tsp dried basil


  • Preheat the oven to 200°C and line a large tray.
  • Mix all of the marinade ingredients together in a bowl and add the sardines.
  • Gently toss to coat and then lay the sardines out in a single layer on the tray.
  • Bake for 15 min until golden and slightly crispy.
  • While they cook, mix all of the crumb ingredients together and toast in a dry pan over medium-high heat until browned and fragrant
  • Serve the sardines warm with a scatter of savoury crumb for crunch.
  • Perfect on toast with a slather of tomato relish.


  • You can use the oil from the tins of sardines for additional flavour and less wastage.
