Ingredients
- SARDINES:
3 tbsp olive oil
1 tsp garlic powder
2 tsp dijon mustard
1 tbsp lemon juice
1 tbsp italian herb mix
1/2 tsp salt
1/4 tsp ground black pepper
500 g tinned sardines
- SAVOURY CRUMB:
100 g panko crumbs
2 cloves garlic, minced
2 tsp olive oil
1 tsp dried basil
Directions
- Preheat the oven to 200°C and line a large tray.
- Mix all of the marinade ingredients together in a bowl and add the sardines.
- Gently toss to coat and then lay the sardines out in a single layer on the tray.
- Bake for 15 min until golden and slightly crispy.
- While they cook, mix all of the crumb ingredients together and toast in a dry pan over medium-high heat until browned and fragrant
- Serve the sardines warm with a scatter of savoury crumb for crunch.
- Perfect on toast with a slather of tomato relish.
Notes
- You can use the oil from the tins of sardines for additional flavour and less wastage.
