Introduction

Is there anything more comforting that curling up in the chair and dipping your fork into a big bowl of Shepard’s Pie?

That combination of rich meat and gravy with a luscious creamy top just can’t be beaten.

Or can it? Try this perfectly Irish twist to a traditional Shepard’s Pie and top it with delicious Colcannon instead.

And just to level up even further, make the Colcannon low carb!

The recipe

Ingredients

500 grams of minced lamb
½ medium onion, finely chopped
1 teaspoon of onion powder
2 teaspoons of fresh rosemary, finely chopped
1 cup of stock; beef or vegetable
1 cup of mushrooms, sliced
¼ cup of sugar-free bbq sauce
1 tablespoon of coconut aminos
1 teaspoon of xanthan gum
Salt and pepper to taste
½ small green cabbage, sliced and tough stems removed
1 medium cauliflower
4 medium spring onions, sliced
1/2 cup cream
1/4 cup butter
1 tablespoon of olive oil
salt and pepper to taste
¼ cup of cheddar cheese, grated
