This is hands down my favourite salad at the moment.

If I’m bringing a dish or you’re coming to a BBQ at our place, you’re probably going to end up eating this salad.

It’s the best combination of crunchy, sweet and bitter.

Better yet, it’s super healthy and ticks just about every box there is to tick.

And that dressing? I make a jar of it every Sunday and drizzle it on EVERYTHING – try it on brown rice *swoon*

Ingredients

  • SALAD
  • 1 medium apple, any variety, but I like Gala

  • 1 small fennel bulb

  • 1/2 red onion

  • 120 bag bag of baby rocket leaves

  • DRESSING
  • 1/3 cup unsweetened cloudy apple juice

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon Dijon mustard

  • salt and pepper to taste

Directions

  • To make the dressing, place all ingredients into a jar and shake well. Will keep in the fridge for u to a week.
  • Using a mandolin or sharp knife, thinly slice the apple and sit in lemon water until ready to use.
  • Thinly slice your fennel and the red onion.
  • Place all of the salad ingredients into a large serving bowl and toss together.
  • Just before serving, drizzle about a third of your dressing over the top and use your hands to toss until the salad is evenly coated.

  • Note: Servings are calculated at 2 tablespoons of dressing per serve
