This chicken casserole is the perfect weeknight dinner. It’s so fast and easy, tastes delicious and only uses a single skillet!

I created this dish for Sugarfree Mom and we all love it.

Combining tender seared chicken, deliciously crispy mushrooms and fresh herbs in a creamy sauce, this casserole will be on high rotation.

Serve with a side of greens or cauliflower mash.

Ingredients

  • 500 grams of chicken tenders

  • 250 grams of mushrooms, thickly sliced

  • 2 tablespoons of butter

  • 2 tablespoons of olive oil

  • 2 cloves of garlic, crushed

  • 1/4 cup of fresh parsley, chopped

  • 2 tablespoons of fresh thyme leaves

  • Salt and pepper

  • 1/2 cup of chicken stock

  • 1/2 cup of cream

  • 1/4 cup of sour cream
