You asked and I listened
I did a series of polls, asking what kind of recipes you would all like to see more of and the overwhelming response was quick and easy dinners
This has got to be one of my top 10 easy dinner options
It comes together in one pan, requires minimum attention and is delicious and filling
The chicken can be swapped out for really anything you prefer, I’ve seen a similar dish made using pieces of sausage
Give it a go and tell me if I hit the brief

  • 500 grams boneless, skinless chicken thighs

  • 2 tablespoons olive oil

  • 500 grams gnocchi

  • 2 teaspoons minced garlic

  • 400 ml passata

  • Cut the chicken thighs into chunks.
  • Heat the oil in an ovenproof pan and brown the chicken.

  • Add the passata and the basil and stir through.
  • Place in the hot oven for 10 minutes and then slice the mozzarella and dot over the top.
  • Bake for a further 10 minutes.
  • Add the spinach just prior to serving.
