Who doesn’t love a delicious and easy salad?

This Chicken BLT Salad is made from ingredients that can be found in most fridges and comes together so quickly that it makes the perfect meal for the end of a busy day.

Combined with the amazing, zesty dressing, this salad will win hearts everywhere.

I couldnโ€™t help but add some avocado to this incredible salad, so I suppose it is technically a Chicken BLAT Salad.

Ingredients

  • Salad:
  • 1 pound of chicken breasts, skin off

  • 4 slices of good quality bacon

  • 6 cherry tomatoes, halved

  • 8 leaves of cos/butter lettuce

  • 1 avocado

  • Salt and pepper

  • Olive oil for searing.

  • Dressing:
  • 1/2 cup of Greek yogurt

  • 1/4 cup of mayonnaise

  • 4 tablespoons of fresh coriander, chopped

  • Zest of 1 lime

  • 2 teaspoons of lime juice

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of ground pepper

  • 1 tablespoon of fresh parsley, chopped
