Introduction

These sweet and tangy onions are the perfect way to make any dish feel just a little bit special. I have a jar of them in my fridge at all times and in particular love to eat them on my Flaxseed Crackers with some goat’s cheese and thyme. They’re also perfect piled on some juicy pork. Enjoy!

The recipe

Ingredients

4 small red onions
3 Tablespoons of olive oil
2 Tablespoon of balsamic vinegar
3 Tablespoons of sweetener of choice
2 teaspoons of fresh thyme, chopped finely

Directions

Step 1
Thinly slice the red onions.
Step 2
Heat the olive oil in a frying pan and add the onions.
Step 3
Cook over med-high heat until the onions start to soften. You don’t want to brown them, you just want them soft.
Step 4
Add the balsamic vinegar, the Swerve and the thyme and reduce heat to medium-low.
Step 5
Cook, stirring occasionally, until the onions are reduced down into a rich, sweet base.
