30 Second Hollandaise

Now you can have hollandaise sauce every single day.

Come on now, let’s be honest. We all love hollandaise sauce but it can be such a pain to make.

I tend to save my hollandaise for special weekend brunch. But, holy cow people. I swear that angels sang when I perfected this sauce. It really does take only 30 seconds and is the perfect texture and flavour. 

And, just to make it even more miraculous…it only uses one jar!

So now we can all have hollandaise on EVERYTHING!


  • 120 grams of butter

  • 3 egg yolks

  • 1 Tablespoon of lemon juice

  • Salt and pepper to taste


  • Take a large mouthed mason jar, or any jar that your hand blender will comfortably fit inside.
  • Place the jar on your scale and zero it back.
  • Place the butter in the jar and then melt it in the microwave until just melted.
  • Place the egg yolks and lemon juice into the butter.
  • Place the hand blender at the bottom of the jar and blitz until combined, lifting the blender slowly. Taste and season with salt and pepper, if desired.
  • Store in the jar, with the lid on, for a couple of days…or eat it with a spoon.
